Vegetable Pulao Recipe (Pulav)
Ingredients
Basmati Rice – 1 cup
Mixed Vegetables – 1 cup (carrot, peas, beans, potato)
Onion – 1 medium (sliced)
Green Chillies – 2 (slit)
Ginger–Garlic Paste – 1 tbsp
Oil or Ghee – 2 tbsp
Water – 2 cups
Salt – as per taste
Whole Spices (optional but recommended)
Bay Leaf – 1
Cinnamon – 1 small piece
Cloves – 3
Green Cardamom – 2
Cumin Seeds – ½ tsp
Instructions
1. Wash and soak rice
Wash basmati rice and soak it for 15–20 minutes.
Drain and keep aside.
2. Heat oil or ghee
In a pan or cooker, add oil/ghee.
Add cumin seeds and whole spices.
Let them crackle.
3. Add onions & green chillies
Add sliced onions and green chillies.
Fry until onions turn light golden.
4. Add ginger–garlic paste
Add ginger–garlic paste and sauté for 1 minute.
5. Add vegetables
Add all chopped vegetables and mix well.
Cook for 2–3 minutes.
6. Add rice
Add soaked rice and gently mix without breaking the grains.
7. Add water & salt
Add 2 cups of water and salt as needed.
Mix once.
8. Cook
If using pressure cooker: cook for 1 whistle on medium flame.
If using pan: cover and cook on low flame for 12–15 minutes until rice is done.
9. Fluff the rice
Once cooked, gently fluff the pulao with a fork.
Serving
Serve hot with:
