Poha Recipe (Kanda Poha)

Ingredients

  • Poha (Flattened Rice) – 2 cups

  • Onion – 1 medium (finely chopped)

  • Green Chillies – 2 (chopped)

  • Potato – 1 small (optional, diced)

  • Mustard Seeds – ½ tsp

  • Cumin Seeds – ½ tsp

  • Curry Leaves – 6–8

  • Turmeric – ½ tsp

  • Salt – as per taste

  • Oil – 2 tbsp

  • Lemon – ½

  • Sugar – ½ tsp (optional)

  • Coriander Leaves – for garnish

  • Peanuts – 2 tbsp


Instructions

1. Wash the Poha

  1. Take poha in a strainer.

  2. Wash gently under running water.

  3. Let it rest for 5 minutes so it becomes soft.

  4. Add salt and sugar (optional) and mix lightly.

2. Fry peanuts

Heat oil in a pan.
Add peanuts and fry until crispy.
Remove and keep aside.

3. Temper the spices

In the same oil:
Add mustard seeds → let them crackle.
Add cumin seeds, curry leaves, and green chillies.

4. Add onions & potato

Add chopped onions and cook until soft.
(If using potato, add diced potato first and cook until half soft.)

5. Add turmeric

Add ½ tsp turmeric and mix well.

6. Add Poha

Add the softened poha and mix gently.
Cook for 2–3 minutes on low flame.

7. Add peanuts & lemon

Add fried peanuts.
Squeeze fresh lemon juice and mix.

8. Garnish

Add chopped coriander leaves and serve hot.
