Anda Curry Recipe
Ingredients
Eggs – 6 (boiled)
Onions – 2 medium (finely chopped)
Tomatoes – 2 medium (chopped)
Ginger–Garlic Paste – 1 tbsp
Green Chillies – 2
Oil – 3 tbsp
Turmeric – ½ tsp
Red Chilli Powder – 1 tsp
Coriander Powder – 1 tbsp
Garam Masala – ½ tsp
Salt – as per taste
Fresh Coriander – for garnish
Water – as needed
Instructions
1. Prepare the eggs
Boil the eggs, peel them, and lightly slit them on the sides.
You can lightly fry them in oil until golden (optional).
2. Fry onions
Heat oil in a pan.
Add chopped onions and cook until golden brown.
3. Add ginger–garlic paste
Add ginger–garlic paste and sauté for 1 minute.
4. Add tomatoes
Add chopped tomatoes and cook until soft and mushy.
5. Add spices
Add turmeric, red chilli powder, coriander powder, salt, and garam masala.
Cook for 2–3 minutes until oil separates.
6. Add water
Add 1 to 1.5 cups water depending on how thick you want the curry.
7. Add eggs
Add the boiled eggs and gently mix.
Cover and cook for 5–7 minutes on low flame.
8. Final touch
Garnish with chopped coriander leaves.
Serving
Serve hot with:
